In the Fall spirit, I put together my own version of Pumpkin Spice Puppy Chow (or pumpkin Pie Spice Muddy Buddies) to share with you guys today. I don’t normally experiment with recipes… I like things that I know work… but I tried this recipe out on a few friends and they loved it so I figured I would share it with you fine folks. Here is what you will need:
6 cups Chex Cereal… I think that the cinnamon version would be best but I used the plane stuff and it was great!!
1 Bag of white chocolate chips
1 stick of butter
1/2 cup peanut butter
1 tsp vanilla
1 box of powder sugar
2 Tbs pumpkin pie spice
Add the White chocolate chips, butter and peanut butter to a microwave safe bowl and microwave for 45 seconds. Stir and microwave for an additional 10 seconds then stir until the mixture is smooth. DO NOT OVER HEAT. If mixture starts to get hard, add a tablespoon of (Cold and hard) butter at a time and stir until incorporated. DO NOT microwave further. Add 1 Tbs pumpkin pis spice to the melted mixture and stir to incorporate. Once throughly melted and mixed, add vanilla, stir.
After mixture is melted and mixed, drizzle it over the chex cereal and carefully stir to coat the cereal.
Add half of the powder sugar to a 1 gallon zip top bag then add half of the cereal mixture to the bag of sugar. Shake gently to coat cereal with sugar. Spread cereal on a cookie sheet to cool and dry. Repeat until all cereal is coated, add powder sugar as necessary to cover all the cereal.
Store Puppy Chow in a sealed container in the refrigerator, or in a cool dark place. Enjoy!!
