We left Puerto Rico two weeks ago and have been on the road since then. I spent four days in Washington, DC visiting with my sister and her family while Tavis was up there for business then we headed south to Florida and spent a week at Disney’s Fort Wilderness Campground with my other sister and my parents. We are currently staying in the Airstream at a campground in the Fort Lauderdale area while Tavis takes care of his military drills for this quarter… It had been a whirl wind of a trip and we still have a week and a half before we fly back to PR…
Note: since we are traveling and will be with our family until we are back home in Puerto Rico, I will not be very active here on LTR. That is not to say that I won’t find some time and get another post up; but IF I don’t… I will be back at the blogging full steam in January!
When we are one the road for this amount of time I am always trying to make the tried-and-true camping recipes a little more exciting and new, so I wanted to share with you our latest burger rendition. We grill out a lot on the road since it is so easy and it keeps the camper from smelling like a kitchen for the next 24 hours. Burgers are great but they can get dull.
The first day that we were at Fort Wilderness I whipped up a pot of Game Day Chili. It was cold outside and a thick bowl of chili sounded delicious. So when we cooked up burgers I decided that there wasn’t a better way to use up the rest of the chili than to smother the burgers in it and top it with cheese! This led to a very messy meal but it was delicious!! Please excuse the paper plates… we are camping after all… 😉
These burgers are as simple as they sound; Make a batch of Game Day Chili and enjoy it for a meal or two (save enough for the burgers!!)
Grill or cook up your favorite burgers on the grill in a pan or your method of choice. Serve on a big thick bakery burger bun.
Smother the burgers with chili and top with shredded cheese. Serve with a knife, fork and lots of napkins. Beer is optional 😉
