Instant Pot Slow Cooker Mushroom Pork Sandwiches – (With Total Newbie Steps)

So if you don’t have an Instant Pot, you are truly missing out. Seriously.

I like less work – so I love slow cooker dump recipes. I like the simpleness and the robust flavors you get as a result…but I hate how everything sort of becomes…mush? There is no crunch, textures kind of run together. Being able to utilize the sauté feature on the Instant Pot has really changed the slow cooking game for me for this reason alone.

If you don’t have an Instant Pot I hope you will stay tuned. You can follow the sauté steps on your stove and just transfer to whatever slow cooker you use :)

If you are an Instant Pot newbie, I’ve included step by step photos of the functions and the buttons for this recipe so you can easily follow along.

For this recipe you will need:

 

                      A 2 lb Pork Loin
                     1/2 Pound Sliced Mushroom
                     1/2 Mushrooms, Sliced
                     1 Packed of Pork Gravy Mix **
                     2 cups of Chicken stock
                     1 tsp Garlic, minced
                     Salt & Pepper to taste
                     Serving Buns

**For a gluten free / keto / low carb version: Store bought gravy mixes are usually nothing more than meat flavored seasonings and thickener. You can sprinkle pork bouillon flavoring ( I would not do an entire cube ) and thicken with arrowroot powder or cornstarch if your diet allows – if you choose to do this I would wait until the end and make a slurry to thicken.
With your lid off and your liner in: You will start out by setting your Instant Pot to “Saute” mode on high. The red lines indicate low, medium, or high heat. If it isn’t set to high, use the “adjust” button to change it. Why does it say 30? That is how long a full Saute cycle is on the Instant Pot.

SAUTE STEP

Add enough oil to the pot to cover the bottom of the liner. It will take a few minutes to get to full temperature.  Once your Instant Pot reads “HOT” add the pork, onion, & garlic. Saute until the pork is browned and the onions have softened.

Next you will add the chicken stock and set to slow cook for two hours on high.

SLOW COOK SETTINGS

After the two hours is up, remove the pork and shred with two forks. Add the gravy mix and mushrooms and stir well. Add the shredded pork back to the pot, and cook for another two hours (if you hit slow cook, it should already be set) Does your kitchen smell amazing yet?watermark sammie
