5 Minute Mini Pizzas

This last summer I saw these delicious little pizza muffins all over Pinterest and just HAD to give them a try!!  So I grabbed the ingredients next time I saw them at the store and tried my hand at them. They were really wonderful!!

We loved them… except for one little thing. If you bake them long enough to cook the dough, the pizza sauce got so hot and it was hard to cool the center down before the outside go cold… The crust and dough made the prefect little insulator that, shy of eating them completely cold, you were alway biting into a molten pit of lava sauce each time.

Although it is trendy to make thinks in cute little muffin tins, I started to think outside the box…

What if, rather than making pizza in muffin tins, we  laid them flat!!!! I know, it is kinda revolutionary thinking but just stick with me here.

If you lay them flat, there is no little pool of molten sauce to attack you with every bit!!! The pizza and sauce cool off in about 5 minutes after removing them from the oven.

I know, I’m right there with you…. I should patten this new idea!!

The whole process to throw them together takes about 5 minutes and they cook up in about 8 minutes.

Without further ado, here is what you will need:

1 can of flaky canned biscuts
1 small can/jar of pizza sauce
8 oz shredded mozzarella cheese
toppings of choice ( I used pepperoni cut into small pieces)

Start off with a greased cookie sheet. Take a few biscuits and pull apart the layers until you get to the desired thickness for your crust. I think I pealed each biscuit into 3 layers.

Mini Pizza doughStretch them out a little and place on the cookie sheet. Add a spoon full of sauce to each pizza.

mini pizza sauceTop with cheese and a your toppings of choice, I used pepperoni.

Mini pizza toppingsBake the pizzas at 350 degrees for 8-10 minutes and check to see if the crust looks like it is turning golden brown. The final cook time will vary based on how thick you made your crust.

5 minute Mini Pizzas

They will be hot when they come out of the oven but should cool off in 5 minutes or so and there shouldn’t be any molten pools of lava pizza sauce to attack you. 😉
