A friend of mine, Angela, passed this recipe on to me a few months back and I have fallen in love with how easy it is to make and how delicious the leftovers heat up! The first time that I made it I was a little skeptical so I only made it in a small baking dish in case we didn’t like it and didn’t want to eat it again. I regretted it the moment I pulled it out of the oven, well maybe a little before that when I smelled it cooking. The next week I made it again in a 9×13 baking dish and that is the way make it now, with plenty of leftovers for our family of 3.

I did a lot of modifying and adding this and that so I am going to share with you my version. I give ranges for the ingredients because this is not a recipe that needs to be exact and you can easily change the amounts of these for your families needs. To stretch this meal out and keep the cost down, reduce the amount of chicken and add more beans. You really can’t mess this recipe up. Depending on the types of seasonings that you choose to use, this recipe is gluten free!

  • 2-3 lbs of boneless chicken, enough to cover your baking dish in one layer
  • 2-3 cans of “pink beans” (thats how the can is labeled here in Puerto Rico but I think they are pinot beans, black beans would work as well)
  • Seasonings of your choice for the chicken, I use garlic salt and Nature’s Seasoning
  • 1 regular size jar (12 oz) of salsa, your favorite kind
  • 1 medium onion, sliced into thin strips
  • 2 cups shredded cheese

Pre-heat your oven to 375 degrees.  Drain and rinse the beans and put them in the bottom of your baking dish.

Put a single layer of chicken over the beans and sprinkle your seasonings of choice over top. The beans are very bland so make sure to add enough to make it flavorful.

Next spoon or pour your salsa over the chicken then top the salsa with your onions. Do NOT put the cheese on yet. Cover tightly with foil and bake for 45-60 minutes or until the chicken is cooked through.

Top with cheese the last 5 minutes of baking. You can serve this over rice or by itself.

Instructions

  2. Layer chicken on top of beans, season chicken with garlic salt and Nature's Seasoning
  3. Cover chicken with salsa
  4. Place sliced onion on top of salsa
  5. Cover with foil and bake 45-60 minutes at 375
  6. Add cheese to top the last 5 minutes of baking
  7. Serve by itself or over rice
