Easy Cheesy Chicken and Salsa Dinner

  • 2-3 lbs of boneless chicken
  • 2-3 cans of "pink beans" or black beans
  • Garlic salt
  • Nature's Seasoning
  • 1 regular size jar (12 oz) of salsa
  • 1 medium onion, sliced into thin strips
  • 2 cups shredded cheese
  1. Rinse beans and put in the bottom of your baking dish (I use 9x13)
  2. Layer chicken on top of beans, season chicken with garlic salt and Nature's Seasoning
  3. Cover chicken with salsa
  4. Place sliced onion on top of salsa
  5. Cover with foil and bake 45-60 minutes at 375
  6. Add cheese to top the last 5 minutes of baking
  7. Serve by itself or over rice
