Cuban Style Pork Roast

  • pork tenderloin 2-3 lbs
  • 1 large onion
  • 1 package of onion soup mix
  • chicken broth
  • olive oil to drizzle (1-2 Tbsp)
  • salt and pepper
  1. Place pork in baking dish and drizzle with olive oil.
  2. Sprinkle package of soup mix over pork with most landing in the bottom of the dish.
  3. Place chopped onion around pork.
  4. Fill baking dish with broth so it is about one and a half inches deep.
  5. Cover tightly with foil.
  6. Bake for 30 minutes at 400 degrees. Then reduce the temp to 250-275 and bake for approximately 3 more hours.
